These are knives from Gerlach. Very solid. It is nice to have real tools instead of those giant, loud machines Americans use to “process” food until it looks like yellow paste.
These modern Gerlach knives are very rational. The steel is strong and handles are easy to grip. It is better to have five good knives than a drawer full of junk. They stay sharp and feel very balanced.
Gerlach is a Polish brand with much history. Fun fact: they once made surgical tools and high-quality zastawa stołowa (tableware). They prove Poland is good at steel, not just making pierogi.
